Spiced Cauliflower Soup

This simple veggie soup is low in calories and ready in under some time.

Ingredients
• Cauliflower - 1 large
• Oil - 2 tbsp.
• Finely chopped onion – 1 cup
• Garlic Clove - 2
• Curry powder - 1 tbsp
• Vegetable stock - 1 ltr
• Greek Yogurt - 100g
• Lemon Juice – 1 tsp

Recipe:
1. First of all, remove all the florets from the cauliflower and cut into pieces.
2. Now heat 2 tbsp. oil in frying pan. Add chopped cauliflower and sauté on medium flame till it becomes golden brown.
3. Now add chopped garlic and again sauté for 2 minutes.
4. Add vegetable stock, curry powder and simmer for 10 to 15 minutes.
5. At last add 100gm yogurt and stir continuously till yogurt becomes smooth.
6. Our Spiced Cauliflower Soup is ready to serve.
7. Garnish it with some chopped cauliflower pieces and spices.
