Carrot Pickle

Carrot Pickle is one of the popular Andhra style pickle. This pickle can be make under 10 minutes. You can have this with any type of dish.
Ingredients:
Carrots – ½ cups (Sliced or cubes)
Salt – as required
Oil – 3 tbsp.
Ginger Garlic – 2 tbsp. Chopped
Turmeric powder – ¼ tsp
Methi seeds – ¼ tsp
Mustard Seeds – 2 tsp
Red chili powder – 2 tsp
Lemon Juice – ½ tbsp.
Recipe:
- First of all, dry roast methi seeds and mustard seeds for a minute and switch off the flame.
- Once, they become cool make powder of it and keep aside.
- Now Heat oil in a pan, add chopped carrots, ginger and garlic and sauté for 3 to 4 minutes.
- Add Turmeric powder, Red chili powder, Salt, and powder we have made in step 1.
- Mix well and keep aside.
- Add lemon juice and store pickle in clean and airtight glass jar.
