Carrot Pickle

Carrot Pickle is one of the popular Andhra style pickle. This pickle can be make under 10 minutes. You can have this with any type of dish.


Carrots – ½ cups (Sliced or cubes)

Salt – as required

Oil – 3 tbsp.

Ginger Garlic – 2 tbsp. Chopped

Turmeric powder – ¼ tsp

Methi seeds – ¼ tsp

Mustard Seeds – 2 tsp

Red chili powder – 2 tsp

Lemon Juice – ½ tbsp.


  1. First of all, dry roast methi seeds and mustard seeds for a minute and switch off the flame.
  2. Once, they become cool make powder of it and keep aside.
  3. Now Heat oil in a pan, add chopped carrots, ginger and garlic and sauté for 3 to 4 minutes.
  4. Add Turmeric powder, Red chili powder, Salt, and powder we have made in step 1.
  5. Mix well and keep aside.
  6. Add lemon juice and store pickle in clean and airtight glass jar.
